Baked salmon (with a hint of coconut) wrapped in prosciutto

I visited Samoa several years ago now and I fell in love with their fish dishes cooked in coconut milk. In tribute to that taste sensation I have created this fish dish which may help even the fussiest eaters eat fish!

4 salmon fillets

ready made coconut marinade e.g Taylor's Lime Coconut Mustard and Dill
4 pieces of prosciutto


Method:

1. Preheat oven to about 200oC

2. Cover salmon pieces with coconut marinade and stand for about 1 hour in fridge

3. Remove from marinade and wrap a piece of prosciutto around the fillet (this will keep the fish moist whilst the prosciutto turns crispy creating a lovely contrast to the soft fish flesh) - place on an oven tray.

4. Place tray in hot oven and cook for about 10-15 minutes or until prosciutto is crisp and brown and fish breaks away easily with a fork.


Serve on a bed of rice and a salad of your choice.
