Red Meat - shopping tips

Look for: 'Lean' mince, 'trim lamb', 'lean beef'.
The claim 'lean' is only legally defined for mince which must have <10% fat. The Australian Meat & Livestock Commission defines 'Lean Beef' and 'Trim Lamb' as special trimmed cuts with <10% fat.General descriptive claims like 'premium' or 'trimmed' could mean anything.

Avoid Marbled Meat
Be on the lookout for fat spread throughout meat (marbling) as you can't cut this off. Trim visible fat off all meats; chicken can be cooked with the skin to retain moisture which can then be removed at the table.
