18.2 Green, black and oolong tea

The difference between green, oolong and black tea relates to the degree of fermentation.

Green tea
The leaves used for green tea are steamed, rolled and dried.

Black tea
The leaves used for black tea are withered first, then rolled or cut and left to fully ferment.
Oolong tea
The leaves used for oolong tea are processed in a similar manner to black tea, just not fermented as long.
