16.3 The difference between dark, milk and white chocolate

Dark chocolate contains about 35% to 50% chocolate liquor with the rest being sugar, vanilla and extra cocoa butter.

Milk chocolate contains about 15% chocolate liquor with the remaining 85% containing milk, sugar, vanilla and extra cocoa butter.
White chocolate is made from cocoa butter, milk, sugar and vanilla. It does not contain any cocoa solids.
