Chocolate

16.1 Introduction

Throughout history chocolate has been a much sought after food. It is made from cocoa beans, the dried seeds found in the pods that grow on cocoa trees.

16.2 Making chocolate

Cocoa beans are fermented for several days before being dried and roasted. The roasted beans are broken down into small pieces and ground to a paste known as chocolate liquor.
This chocolate liquor consists of roughly 50% cocoa solids and 50% cocoa butter. This chocolate liquor forms the basis of all chocolate (except white chocolate).
