Making chocolate
Cocoa
beans are fermented for several days before being dried
and roasted. The roasted beans are broken down into
small pieces and ground to a paste known as chocolate
liquor.
This
chocolate liquor consists of roughly 50% cocoa solids
and 50% cocoa butter. This chocolate liquor forms the
basis of all chocolate (except white chocolate).
