11.2.1 Protective properties of fruits and vegetables

Anti-oxidants

  ~ protect cells against oxidative damage
  ~ protect compounds such as cholesterol and triglycerides (blood fats) from the damaging effects of oxidation. Oxidised cholesterol is more likely to be deposited in the inner arterial wall - a process that narrows arteries and reduces blood flow (atherosclerosis).
  ~ play a role in preventing or slowing the development of many diseases. For example, many cancers are initiated when DNA is damaged through oxidation.
